This tiramisu is made without milk or eggs, and is made with whipped soy milk, cashew nut paste, and salt koji to create a creaminess that surpasses mascarpone. It is also very popular for its crunchy texture made with soybean pulp and rice flour.

Butter Sandwich (Rum Raisin)
The butter is made with soy milk, tofu, and cocoa butter, with white miso paste and sugar beet added to give it a rich flavor. The cookies are made with rice flour, almonds, and soy milk, giving them a light and moist texture.
